Hot Chocolate with Homemade Marshmallows

Today we made hot chocolate with homemade marshmallows. Although the hot chocolate was nothing special, I liked being able to choose the size and shape of my marshmallows (although I ended up having only a single giant one).

Banana Splits

We spent the past two classes working on banana splits. We made them with bruléed bananas and cooked sugar swirls. Using the blowtorch to melt sugar onto the bananas was cool, but I didn't really liked the taste. The splits looked great, though!

Peanut Brittle

Today we made peanut brittle. It was more difficult than I expected to keep the sugar from burning, but I think that the brittle turned out great and it was delicious.

Cupcake Mosaic

Today, we made a mosaic out of cupcakes. I was a little skeptical about the idea at first, but it turned out to be lots of fun! We made the mosaics in groups of two, and, I have to admit, Kelsey did most of the artistic work on ours. I can't complain, though, because it looked really good at the end!

Gingerbread Village

Ever since Halloween, the entire class has been working on making a gingerbread village! Everyone made a house, and the houses chosen got to go into the village and be put on display at the Gingerbread Lane display at the Hyatt hotel! Unfortunately, my house didn't make the cut, but I was still really happy with how it turned out, and the village looked amazing!

Jack-o-lanterns!

Over the past few classes, we have been designing and carving jack-o-lanterns. It was hard to come up with a design, and I ended up just freestyling for the most part, but I liked how mined turned out. Happy Halloween!

Spiderweb Cookies

Today we made spiderweb cookies. Although the cookies look very elegant, they were fairly simple to make. It was, however, our second attempt, as an error with the recipe had rendered our first batch crumbly and tasteless. I have to admit, this wasn't one of my favourite labs, but the cookies ended up looking great, and just in time for Halloween!

Yellow Cupcakes

Over the past two classes, we made a batch of yellow cupcakes. We iced them in pink and purple, using royal icing. My lettering could have been a bit better, the cupcakes turned out surprisingly well, and I enjoyed the lab.

Rainbow Cookies!

Last week in foods class we made rainbow cookies! It was lots of fun, and we ended up with over 100 cookies! I was really surprised to see that they turned out great, even though they weren't perfect.

First Lab - Banana and Zucchini Loaves

Over the last few foods classes, we made two loaves: a banana loaf and a zucchini loaf! They were both delicious, but I think that my favourite was the zucchini loaf, because the zucchini made it crunchy and flavourful. Below is the recipe:

Ingredients:

30mL flour
2 eggs
185mL sugar
5mL baking powder
5mL salt
2mL baking soda
2mL cinnamon
2mL nutmeg
125mL vegetable oil
5mL vanilla Zucchini loaf:
250mL grated zucchini
185g chopped walnuts Banana loaf:
250mL banana
125mL choc. chips
125mL walnuts

 Method:

1. Preheat oven to 350 degrees Fahrenheit.
2. Grease loaf pans using non-stick spray.
3. Combine the dry ingredients in a large bowl.
4. In a medium bowl, mix the wet ingredients.
5. Fold the wet ingredients into the dry ones.
6. Pour into loaf pans
7. Bake for 35 - 40 minutes.
8. Let cool
